His contract was until the end of the season, and it was expected that he would renew it.
But Hamburg said that Kuntz approached the supervisory board after Christmas and asked to be released by December 31, which was granted.
"Sometimes there are more important things than football. That is now the case for me. I don't want to say any more about it and ask that you respect that," Kuntz said in the club statement.
"I would like to thank HSV for a great year and a half. I wish the teams and the entire management all the best for the future."
Supervisory board chairman Michael Papenfuss said they would not look for a replacement immediately but rather focus on the second part of the season and the January transfer window.
Hamburg, who are 13th, resumed training on Friday after a short winter break. Their next Bundesliga match is on January 10 in Freiburg.
